I'm not/wasn't a big fan of coconut but after constant requests from a certain someone to make something coconut flavored, I decided to give it a second chance. To my surprise, I actually liked the cupcakes. Perhaps it's because the dense but moist texture of the cupcake paired with the light and fluffy icing made for the perfect combination or I have a new found like for coconut or maybe it's both. Either way, I'm glad I decided to make these even though I ended up with a large surplus of icing afterward. Thankfully the cupcakes were gone by the end of the day.
